It is the fruit that comes from the Bertholletia excelsa species subjected to a process of shelling and dehydration. It is found naturally and wild only in the Amazonian forests of Peru and Brazil.

  • Flavor: characteristic of amazonian chestnut, without presenting strange flavors, such as rancid, bitter, among others.
  • Smell: pleasant and characteristic of the amazonian chestnut, without strange odors.
  • Color: characteristic of amazonian chestnut, bicolor (brown / ivory), with partial presence of cuticle and without cuticle.
  • General appearance and texture: Natural to fresh Brazil nut, with smooth and clean surface, rigid and compact consistency (crunchy), free of damage.
  • Humidity: Between 2% to 3.5%.
  • Acidity index: < 0.5% expressed as oleic acid.
  • Peroxide value: < 10 mEq 02/Kg
  • Heavy metals: Amazonian chestnut shall not exceed the maximum limits for heavy metals established by the Codex Alimentarius (Codex Stan 193-1995) and/or Article 15º of D.S. 004-2011-AG.
  • Pesticide residues: Amazonian chestnut shall not exceed the maximum residue limits established by the Codex Alimentarius Commission for pesticides and/or the country of destination.
  • Mycotoxins:Amazonian chestnut shall not exceed the maximum limits for mycotoxin levels established by the Codex Alimentarius Commission (Codex Stan 193-1995) and/or the country of destination. It is also recommended to comply with CAC/RCP 59-2005.

PROCESSES

1° Peeling process

Once the nuts are received in our processing plant, the peeling process begins, in our modern machinery, following strict hygiene and quality controls, continuing with the drying of nuts in our ovens, in orderto achieve optimum humidity.

2° Select and cut of nuts

Naturally, in aseptic environments, the product is subjected to a rigorous selection examination which is carried out by specialized personnel, under the strictest hygiene rules, separating the broken, damaged nuts.

3° Weighing, sealing and vacuum packaging

Depending on the different qualities and in order to guarantee the conservation of nuts, the vacuum packaging is produced in polyethylene bags, which are packed in cartoon boxes, and weigh 20 kg or 44 pounds, which passes through a metal identifier, and by a lastrigorous quality control, being ready for export from Peru to the world.
